Sous Chef – Exclusive Island Resort, Caribbean

An exceptional opportunity has arisen for a passionate and driven Sous Chef to join the culinary team of a prestigious private island resort in the Caribbean.

This role is ideal for a motivated professional who thrives in a high-end, fast-paced environment and is eager to contribute to delivering outstanding dining experiences in one of the world’s most unique locations. Working closely with the Executive Chef, you will play a key role in shaping the culinary offering, leading kitchen operations and maintaining the highest standards of quality and service.

As Sous Chef, you will be responsible for supporting the overall management of kitchen operations while ensuring excellence in food preparation, presentation and team performance. You will take an active role in menu development, staff training and operational leadership, while also stepping in to lead the kitchen in the absence of the Executive Chef. This is a hands-on leadership position requiring strong organizational skills, creativity and the ability to perform under pressure.

Job description:

  • Support the Executive Chef in daily kitchen operations.
  • Supervise, train and motivate kitchen staff to maintain high performance standards.
  • Ensure consistent preparation and presentation of high-quality dishes.
  • Assist with menu planning, development and seasonal updates.
  • Monitor food quality, portion control and hygiene standards.
  • Maintain full compliance with health, safety and sanitation regulations.
  • Manage inventory, ordering and cost control.
  • Operate within a high-volume kitchen (up to 750 meals daily).
  • Participate in the execution of events, weddings and private celebrations.
  • Lead kitchen operations in the absence of the Executive Chef.
  • Foster a positive, collaborative and professional team environment.
  • Ensure excellent internal and external customer service standards.
  • Stay up-to-date with food safety regulations and implement changes immediately.
  • Oversee food supply levels and ensure availability of all ingredients.
  • Work across both hot and cold kitchen environments as required.

We require:

  • Proven experience as a Sous Chef in an independent, trend-driven restaurant (minimum 3 years.)
  • Experience managing high-volume service (minimum 300 dishes per day).
  • Fluent English is essential.
  • Experience in Mediterranean and French cuisine (fusion experience is a plus).
  • Caribbean experience is advantageous, but not required.
  • Relevant food handling certification.
  • Hands-on leader with a proactive and self-driven mindset.
  • Ability to work effectively under pressure and delegate tasks efficiently.
  • Willingness to work weekends and holidays.
  • Good working knowledge of Excel, POS, PMS systems and hotel operations.
  • Understanding of budgeting and basic marketing principles.
